Our study of biblical banquets concludes with a joyful celebration feast.  To ensure that this four-course meal is beautiful, healthy, and not overly heavy, we recommend focusing on local, seasonal produce. Here are a few ideas using recipes available on the Web, More-With-Less Cookbook, and Extending the Table; order these two Herald Press cookbooks by calling 1-800-245-7894.

Spring/summer menu, with recipes from More-With-Less Cookbook
Appetizer: Veggie tray with Raw Vegetable Dip (p. 306) and/or Nippy Garbanzo Spread (p. 308).  Or try Gougeres French Cheese Puffs, Veggie Pizza, Stuffed Snow Peas, or Artichoke Tartlets.

Soup: Fresh Asparagus Soup (p. 203) or Spring Minestrone with Brown Breadsticks (p. 66).

Entrée: Tomato Quiche (p. 157), Taco Salad (p. 253), or Pasta Primavera with Mint Tea (p. 307).

Dessert: Fresh fruit shortcake (peach, strawberry, raspberry, blueberry, nectarine, or more than one to choose from) or angel food cake with fruit toppings.

Fall/winter menu, with recipes from More-With-Less Cookbook
Appetizer: Spinach Balls, Stuffed Mushrooms, or Cheddar Cheese and Broccoli Appetizers.

Soup: French Onion Soup (p. 205) or Butternut Bisque with crackers.

Entrée:  Lasagne with steamed kale or green beans

Dessert: Apple and pumpkin pies or Roman Apple Cake (p. 283).

International menu, with recipes from Extending the Table
Appetizers: Vietnamese Spring Rolls (p. 264) with peanut sauce (p. 265)    (Asia)
and Small Samosas (p. 270) with a chutney such as peach (p. 277) or purchased (Africa)

Soup: Creamy Carrot Soup (p. 80) with whole wheat rolls (Europe)

Entrée: Chicken with Rice (p. 210) with succotash (corn and lima beans), baked winter squash, or other seasonal steamed vegetables (South and North Americas); Spinach Pie (p. 218) vegetarian option

Dessert: Fresh fruit tray, Baklava (p. 311), and coffee or Spiced Tea (p. 31) (Middle East)
